A Warm Dark Chocolate Fondant with a melt in the middle, saucy centre… need I say more? This one is always a hit with my wife and kids AND anybody else who tries it! It is a great dinner party dessert as you can make it up the night before, saving you the hassle of running around on the day – enjoy cooked straight from the fridge when required.
Serves: 4 adults, as a dessert
Preparation time: 30 minutes
Cooking time: 10 minutes

Ingredients
- 2 medium eggs
- 2 egg yolks
- 100g butter
- 100g dark chocolate
- 45g sugar
- 60g flour
Method
- Cream the eggs and sugar together
- Melt butter and chocolate
- Add the melted chocolate to egg mix
- Add flour and whisk until completely mixed
- Pour into greased moulds and cook at 180°C for 8-10 minutes
- Leave the fondant to rest for 1 minute after removing from oven
Presentation
- Run a small knife around the edge of the ramekin and turn fondant out onto plate
- Serve with a sharper taste, such as orange & cardamom ice cream or raspberry sorbet
