Recipe: Vanilla Cupcakes

 Makes: 24 Temperature: 160C Cooking time: 20-22 minutes 

INGREDIENTS 

Cake: 

200g softened butter* 

200g caster sugar 

4 eggs 

200g self raising flour* 

1 tsp baking powder* 

1 tsp vanilla bean paste 

Icing: 

110g softened butter * 

180g icing sugar 

1 tsp vanilla bean paste 

Cake toppers 

PREPARATION 

1. Place cake cases into 2×12 bun tins and preheat oven to 160C. 

2. Cream the butter and sugar together, then beat the eggs in a bowl. 

3. Add egg a little at time using a touch of flour to prevent curdling. 

4. Add vanilla bean paste, flour and baking powder and 1-2tbsps of cold water to create a soft dropping consistency. 

5. Divide the mix between cake cases and bake for 20-22 minutes until golden. 

6. Cream the butter, sugar and vanilla paste together to create icing. 

7. Once cakes are cool, pipe with a swirl of buttercream icing and add a cake topper.
