Makes: 8 popsicles

Total time: 15 minutes plus freezing time
INGREDIENTS
450g strawberries, quartered
2 tbsp lemon juice
2 tbsp water
4 tbsp honey
1 tsp vanilla extract
300ml milk kefir
60g blueberries
METHOD
1.Fit the blender attachment to the MultiPro Compact Machine.
2.Turn the digital scales on and add the cut strawberries along with the lemon juice, water and two tablespoons of the honey.
2.Secure the lid and filler cap in place.
4.Purée on Speed 2 until completely smooth, adding a little water at a time to loosen the mixture if necessary.
5.Remove from the base and pour half of the strawberry purée into the popsicle moulds. Reserve the remaining puree for the final layer of your popsicles.
6.Fit the main bowl to the machine with the dual whisk.
7.Add the remaining two tablespoons of honey, vanilla extract and the milk kefir to the bowl, whisk on speed 2 until well-combined.
8.Prepare the middle layer by evenly spooning the sweetened kefir on top of the strawberry puree layer.
9.Once you’ve used up all the milk kefir, gently push blueberries into the layer of milk kefir.
10.Carefully pour the remaining strawberry puree evenly among the popsicles and insert the wooden sticks.
11.Place them in the freezer until all layers are set, preferably overnight.
12.To unmould the popsicles, hold the mould under lukewarm water for a few seconds until the popsicles release cleanly.
