A nutritious and Mediterranean inspired snack for the whole family to enjoy, or surprise your guests with a starter at the next meal.

Ingredients
Main
- 250g white flour
- 160ml water
- 5g yeast
- 5g sea salt
- 13ml olive oil
- small handful of chopped thyme
- small handful of chopped rosemary
- small handful of chopped sage
Pesto
- bunch of basil
- bunch of parsley
- 50g parmesan
- 100ml olive oil
- 50g toasted walnuts
- 2 garlic cloves
- salt and pepper
Method
- Mix all of the ingredients together into a white dough
- Knead for 10 minutes until stretchy
- Leave to prove for 15 minutes
- Lightly flour your work surface and roll the dough out thinly (roughly 1cm thick)
- Cut the rolled out dough into thin strips and place them on a large tray, stretching each one to fit
- Be sure to leave a little space between each one so they can jump in size in the oven without joining together
- Once the tray is full, bake in the oven at 230°C for 8 minutes, or until they start to golden up – then leave to cool
- To make the pesto, blend the ingredients together in a mini chopper or pestle and mortar until you have a delicious paste
